The ginger soy sauce chicken is a sweet, savoury chicken dish that is pretty hard to prepare as it requires the use of a clay pot to simmer the ingredients for hours on end. We have a version here that is easy to prepare should you find yourself needing a little pampering to take you over a bit of a hump during the week.
The main ingredients are still the same; they are ginger, soy sauce, and chicken. The ginger provides an aromatic complement to the chicken with the soy sauce rounding the delectable dish. Instead of a clay pot, we’re going to stir fry it. It is a quick and easy way to give yourself an excellent, delicious tasting, workweek dinner dish; works for a weekend meal too! I love the sticky, savoury brown sauce that will result from the cooking process; it goes very well with a nice bowl of jasmine rice!

Quick HACK on FRAGRANT Old Ginger Soy Sauce Chicken 改良版 - 教你快速炒出香浓多汁的老姜酱油鸡
- 500 g Chicken 鸡肉
- 100 g Ginger (Sliced) 姜片
- 100 g Yellow Onion (Cut) 大葱
- 100 g Dried Chili 辣椒干
- 3 tbsp Sesame Oil 芝麻油
- 2 tbsp Black Soy Sauce 黑酱油
- 2 tsp Oyster Sauce 耗油
- 1 tsp Salt 盐
- Clean and dice the chicken into medium cubes. 将鸡肉洗净后，再切成中块。
- Slice the ginger. 将姜切成快片。
- Chop the yellow onions into small cubes. 将葱切成小快。
- On medium heat, warm up the pan and add in the oil. 以中火加热，热锅好后倒入油。
- When oil is hot, add in the ginger, and stir fry it. 油热时，加入姜，翻炒。
- Add in the onions, continue to fry, take care not to burn it. 加入洋葱，继续翻炒，并注意防止烧焦。
- Add in the chicken, cook it lightly. 加入鸡肉，微炒至表面熟透为止。
- Turn up the heat to high, add in the soy sauce and give it a good mix, take care to stir it continuously. 把火调至高温，倒入酱油一起混合，然后不断地搅拌均匀。
- Next, add the salt, oyster sauce and continue to stir fry. 接下来倒入盐，蚝油，再继续翻炒。
