Laksa is a popular Peranakan cuisine in Southeast Asia. Various recipes of laksa have gained popularities in different countries.

Sarawak laksa is a traditional noodle dish from Kuching, East Malaysia. It looks like the normal curry laksa but is a bit more defined compared to Katong Laksa and Penang Laksa. Sarawak laksa recipe is made mainly from a laksa paste consisting of belachan, tamarind, lemongrass, herbs and spices with a little coconut milk. Hence, it has a fine balance of aromatic herbs and spices with a hint of sourish and spicy but not overly rich and creamy.

Ingredients
  

Ingredients for the Sarawak Laksa Paste 砂劳越叻沙酱料:

  • Dried Chill 辣椒干
  • Shallot 红葱
  • Ginger 姜
  • Galangal 南姜
  • Garlic 蒜头
  • Lemongrass 香茅
  • Cashew Nut 腰果
  • Coriander Powder 芫荽粉
  • Cumin Powder 小茴香粉
  • Tamarind Paste 罗望子膏
  • Brown Sugar 红糖
  • Curry Powder 咖哩粉
  • Paprika Powder 红椒粉

Ingredients for the Laksa Broth 叻沙汤底材料:

  • Chicken Bone 鸡骨
  • Chicken Meat 鸡肉
  • Coconut Milk 椰浆
  • Shrimp Shell 虾壳
  • Belachan 峇拉煎

Ingredients for the Laksa Topping 叻沙配料:

  • Mee Hoon 米粉
  • Chicken Meat 鸡肉
  • Shrimp 虾
  • Bean Sprout 豆芽
  • Egg 蛋

Instructions
 

Step 1: Preparation for Sarawak Laksa Paste 砂劳越叻沙酱料

  • Cut the ingredients into the cube and mix it with a food blender. 将材料切小块后,放进搅拌机
  • Add some cooking oil. 加入少许的油
  • Stir evenly. 搅拌均匀备用

Step 2: Instructions for Laksa Broth 叻沙汤底

  • Boil the water. 水煮沸腾后
  • Add the Sarawak laksa paste. 加入砂劳越叻沙酱料
  • Add shrimp shell, chicken bone and chicken meat. 加入虾壳,鸡骨及鸡肉
  • Add belachan. 加入峇拉煎
  • Cook over low heat for 60mins and drain off. 小火煮60分钟后过滤

Step 3: Instructions for Laksa Topping 叻沙配料

  • Rinse the ingredients and blanch in boiling water. 配料洗净汤水
