Classic Black Vinegar Pork Trotter for CONFINEMENT 经典月子餐 猪脚姜醋

Black vinegar pork trotter, also known as vinegar gingers pork which is the traditional Guangdong dish. The dish is a confinement meal because of its nourishing effects. 猪脚醋又称猪脚姜醋是一道广东传统名菜。据说坐月子的女人都吃,因为它具有调理身体和滋补的功效。但今天它已成了众人喜爱的一道家常菜。

Ingredients
  

Ingredients:

  • 1000 g Pork Trotter (Cut) 猪手 (剁块)
  • 150 g Old Ginger
  • 750 ml Black Vinegar 唐山黑醋
  • 1 tsp Sesame Oil 麻油
  • 30 g Palm Sugar 椰糖
  • 30 g Dried Chilli 干辣椒
  • 3 tbsp Soy Sauce 酱油
  • 2 tbsp Salt 盐
  • 300 ml Water 水

Instructions
 

Cooking Instructions:

  • Heat the wok, add in old ginger and saute it. 烧热锅,下姜煸香
  • Add in sesame oil, pork trotter and fry until it turns to a golden brown. 加入麻油,猪手炒至肉变金黄色
  • Add in soy sauce, black vinegar, fry evenly until it boils. 倒入酱油和黑醋,炒匀待滚
  • Add in palm sugar and dried chilli. 倒入椰糖和干辣椒
  • Extract from the wok, transfer to the pot. 盛起,转移深锅内
  • Add in water (submerge the pork trotters) and cover with a lid. 倒入水 (盖过猪脚), 加盖,
  • Boil it with high heat then switch to medium heat and simmer for 45 minutes, stir in between to avoid charred. 大火煮沸后,转中火焖煮45分钟,期间要搅拌避免焦低
  • Turn off gas, it ready. 熄火,上桌
